{"id":975,"date":"2015-12-14T09:00:34","date_gmt":"2015-12-14T14:00:34","guid":{"rendered":"http:\/\/etbodywork.com\/?p=975"},"modified":"2015-11-22T16:53:24","modified_gmt":"2015-11-22T21:53:24","slug":"instead-of-candied-yams","status":"publish","type":"post","link":"https:\/\/etbodywork.com\/?p=975","title":{"rendered":"Instead of Candied Yams"},"content":{"rendered":"<p>A healthy alternative to candied yams, try glazed Sweet <\/p>\n<p>Ingredients:<br \/>\n5 sweet potatoes or yams (about 3 pounds)<br \/>\nNonstick cooking spray<br \/>\n1\/4 cup honey<br \/>\n1 tablespoon cornstarch<br \/>\n1 teaspoon cinnamon<br \/>\n2 tablespoon Smart Balance or other light tubbed butter spread<br \/>\n2\/3 cup apricot nectar<br \/>\n1\/2 cup finely chopped pecans or walnuts, optional<\/p>\n<p>Directions:<br \/>\n1. Preheat the oven to 350 degrees and mist a 9 x 13-inch baking dish with nonstick cooking spray. Put potatoes in a pot with enough water to cover them by 1 to 2 inches. Bring to a boil and cook for 20 to 25 minutes, until tender. When cool enough to handle, peel and cut into 1\/2-inch slices and add to the baking dish.<br \/>\n2. Combine remaining ingredients except nuts in a saucepan over high heat and bring to a boil. Boil for 1 minute, stirring. (Mixture will thicken.) Pour over sweet potatoes and top with nuts, if desired.
