{"id":978,"date":"2015-11-25T09:00:33","date_gmt":"2015-11-25T14:00:33","guid":{"rendered":"http:\/\/etbodywork.com\/?p=978"},"modified":"2015-11-22T17:01:14","modified_gmt":"2015-11-22T22:01:14","slug":"pecan-pie-vs-vegan-pumpkin-cheese-cake","status":"publish","type":"post","link":"https:\/\/etbodywork.com\/?p=978","title":{"rendered":"Pecan Pie vs. Vegan Pumpkin &#8220;cheese&#8221; Cake"},"content":{"rendered":"<p>Instead of Pecan Pie this Thanksgiving, try this vegan pumpkin &#8220;cheese&#8221; cake!<\/p>\n<p>Ingredients:<br \/>\nCrust:<br \/>\n2 cups walnuts or pecans<br \/>\n1\/4 cup agave nectar<br \/>\n1\/2 cup dried coconut<br \/>\n1\/4 teaspoon sea salt<br \/>\nFilling:<br \/>\n2 cups cashews, soaked for 4 hours<br \/>\n1 can pureed pumpkin or 1 1\/2 cups raw pureed pumpkin<br \/>\n6 tablespoons coconut oil, melted<br \/>\n3 tablespoons lemon juice<br \/>\n1\/2 cup agave nectar<br \/>\n3 tablespoons coconut water or coconut milk<br \/>\n1 teaspoon vanilla extract<br \/>\n2 teaspoons cinnamon<br \/>\n1\/2 teaspoon nutmeg<br \/>\n1\/4 teaspoon cloves<br \/>\n1 teaspoon ground ginger<\/p>\n<p>Directions:<br \/>\n1. In food processor, pulse all crust ingredients together until sticky. Press mixture into a 9-inch springform pan.<br \/>\n2. Blend filling ingredients in a blender until smooth and creamy. If mixture is too thick, add a bit more coconut water. Pour into crust and freeze for 1 to 2 hours, until firm.
